Heat some oil in a pan.
Splutter mustard seeds, black gram and curry leaves.
Add Onions and fry;add brinjals into it and fry for 2 mins.
Add sambar powder and enough salt.
Cover the pan with a lid and let it cook for 5 mins.
Check for the status once in a while so that the masala doesn`t stick with the pan.
:- Sprinkle oil if needed.
When the brinjals are almost cooked, add thick cocunut milk and stir.
Let it cook for 2 more mins and then switch off the stove.
:- Tasty kathirikai varuval ready!!
:- This side dish will go well with pulao, coconut rice, Dal rice. And its more tastier with Curd rice!!!
