5 nos Small brinjals (cut into thin lengthy pieces)1 no Onion (large)1 spoon Sambar powder2 spoons Thick coconut milkOil (enough to fry onions and brinjals)Salt (As reqd)For seasoning:Mustard seedsBlack gram(Uzhunnuparippu) Curry leaves Heat some oil in a pan.Splutter mustard seeds, black gram and curry leaves.Add Onions and fry;add brinjals into it and fry for 2 mins.Add sambar powder and enough salt.Cover the pan with a lid and let it cook for 5 mins.Check for the status once in a while so that the masala doesn`t stick with the pan. :- Sprinkle oil if needed.When the brinjals are almost cooked, add thick cocunut milk and stir.Let it cook for 2 more mins and then switch off the stove.:- Tasty kathirikai varuval ready!! :- This side dish will go well with pulao, coconut rice, Dal rice. And its more tastier with Curd rice!!! Tamil
