Curd Rice - With a difference

Ingredients
  

  • 1/2 kg Fine Rice not Basmati rice
  • 1 ltr Curd not sour
  • 1 cup Green chilly pieces
  • 10 nos Red chillies
  • 100 gm Cashew nuts
  • 1/2 cup Garlic finely chopped
  • 1 tbsp Mustard seeds
  • Curry leaves A fist full
  • Salt As reqd
  • 1 ltr Milk
  • Asafoetida A pinch, Kaayam
  • 100 ml Ghee

Instructions
 

  • Cook rice. Spread it in a wide plate.
  • Take milk in a vessel and boil it until reduced to 700 ml. Keep aside.
  • Take ghee in a frying pan and warm.
  • Add a pinch of hing and all the other ingredients except salt and splutter.
  • Mix them with rice.
  • Add curd and salt. Mix well.
  • Allow it to cool.
  • Add thick milk before serving.
