Soak dal in 2 cups of water for an hour.
Add turmeric powder to it and cook it till done.
After the dal is cooked, add all the vegetables to it and cook it for 1 more whistle.
:- This helps the dal to be mashed,
while the vegetables would be cooked.
Heat oil in a pan.
Add mustard seeds, cumin seeds, curry leaves and asafoetida.
Add the chopped onions, slit green chillies and ginger-garlic paste and saute till the raw smell goes.
Add red chilli powder, salt and chopped tomatoes and saute for 5 mins, till the oil separates.
Add the mashed dal and check for the seasoning.
Close the lid and let it simmer for a few mins.
Just before serving, add the lemon juice and coriander leaves.
:- Serve with Chappatis/Rice.
