Dal Bahar A healthy and wonderful combination of Dal and Vegetables 1 cup Red gram (Thuvaraparippu)1 no Carrot (½ inch cubes, medium)7 - French beans (½ inch pieces)1/4 of Cauliflower (cut into small florets, small)1 no Potato (½ inch cubes, medium)Fresh peas (A handful)2 tsp Oil1/2 tsp Mustard seeds1 tsp Cumin seeds (Jeerakam)6 - Curry leavesAsafoetida (optional, Kayam)1 - Green chillies (slit)Ginger (garlic paste - 1 tsp)1 no Onion (chopped)2 nos Tomato (chopped)1/2 tsp Turmeric powder1/2 tsp Red chilli powderSalt (As reqd)2 tbsp Fresh coriander leaves (chopped)Juice of a lemon Soak dal in 2 cups of water for an hour.Add turmeric powder to it and cook it till done.After the dal is cooked, add all the vegetables to it and cook it for 1 more whistle. :- This helps the dal to be mashed, while the vegetables would be cooked.Heat oil in a pan.Add mustard seeds, cumin seeds, curry leaves and asafoetida.Add the chopped onions, slit green chillies and ginger-garlic paste and saute till the raw smell goes.Add red chilli powder, salt and chopped tomatoes and saute for 5 mins, till the oil separates.Add the mashed dal and check for the seasoning.Close the lid and let it simmer for a few mins.Just before serving, add the lemon juice and coriander leaves.:- Serve with Chappatis/Rice.
