Easy Coconut Rice Easy

Coconut rice made freshly cooked rice and grated coconut

Ingredients
  

  • 2 1/2 cups Cooked rice
  • 1/2 tsp Salt
  • 1/8 th Pepper powder
  • 2 nos Green chillies finely chop or grind to paste)
  • 1 red chilly
  • 1 inch Ginger
  • 2 tbsp Grated coconut
  • 1 tbsp Coriander leaves finely chopped
  • 1 tbsp peanuts optional
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Cumin seeds Jeerakam
  • 1 tsp Bengal gram Kadalaparippu
  • 1/2 tsp Black gram Uzhunnuparippu
  • 2 sprigs Curry leaves
  • 1 or ghee roasted cashews for garnishing)

Instructions
 

  • Heat oil in a pan.
  • Season with mustard seeds, Bengal gram, black gram, cumin seeds, dry red chillies and curry leaves ,cashews and peanuts(optional).
  • Add the finely grated ginger and green chillies and saute for 1/2 minute.
  • Add grated coconut and immediately add salt, pepper, coriander leaves and finally rice and mix well.
  • :- Serve hot.
  • note: ------- -This can be prepared as naivedyam for pujas.
