For preparing Kerala Pineapple Curry, first cut the pineapple into small cubes.
Heat a little oil in a pan.
Saute the green chillies and ginger.
Add the tumeric powder, chilly powder and salt.
When the oil separates, add the pineapple pieces and cook.
While it gets cooked, grind together coconut, garlic, cumin seeds and turmeric into a fine paste.
Add this to the cooked pineapple. Mix well.
Allow it to boil & cool.
Add the whipped curd.
:- Do not boil.
Season with mustard seeds, dry red chillies, small onions, curry leaves and fenugreek seeds.
:- Serve Kerala Pineapple Curry with rice.
