Fried rice with vegetables and egg - Kerala Easy Vegetable Fried Rice

- 2 cups Rice
- 1 tsp Pepper powder
- 2 tsp Salt
- 1/2 cup Celery diced into tiny cubes
- 1/2 cup Carrot cut into a wheat grain size
- 1/4 cup Spring onions finely chopped
- 10 nos Beans finely chopped
- 1 no Egg
- 1 tbsp Oil
Cook rice with 4 cups of water and cool it in a flat plate.
Heat oil in a pan.
Add egg and whisk it well with a spatulla.
Add celery, carrot, spring onions, onions and beans.
Add salt, pepper powder and stir and saute for 3 mins.
Add cooked rice to it and stir it well and switch off the stove.
Garnish with spring onions.
