Pani Puri

Ingredients
  

For puris:-

  • 1 cup Maida Flour
  • 1 cup Semolina Rava
  • Baking powder A pinch
  • Salt As reqd
  • Water for mixing
  • Oil for frying

For pani:-

  • Tamarind A lemon sized ball, Puli
  • 15 nos Dates soaked in water
  • 2 tbsp Jaggery powdered Sharkkara
  • 2 sprigs Coriander leaves
  • 2 sprigs Mint leaves Pudhina
  • 2 tsp Cumin powder fried and powdered, Jeerakam
  • 1 tsp Chilly powder
  • 3 cups Water

For Filling:

  • 2 cups Mashed potato
  • 1 tsp Cumin powder
  • 1/2 cup Onion Finely chopped
  • 1 tbsp Coriander leaves
  • 1 tsp Chaat masala
  • 1/2 tsp Pepper powder
  • 1/2 tsp Red chilly powder
  • As reqd Salt

Instructions
 

  • For making puris:- Mix together all the ingredients to make a smooth dough. You can also add 1 tbsp oil(optional) to the mixture for smoothness.
  • There is no need to beat the dough.
  • Make chapathis out of it and cut out very small round puris approximately 3 - 4 cm diameter.
  • Heat oil in a kadai.
  • Gently drop the puris. Gently press the puris so that it swells into a single bubble.
  • Keep the fire slow and keep on turning the puris till its golden crisp.
  • Take out pooris and drain on paper.
  • For making the filling:- Mix together all the ingredients given adding enough salt to taste.
  • Heat it gently and keep aside.
  • For making the pani:- Put all the ingredients into a blender and blend well.
  • :- Check for the taste. It should be a mixture of sweet, sour and chilly.
  • For making pani puris:- Make a hole in the centre of the puri and first put some filling.
  • Dip in pani and have.
