Tamil Nadu Egg Kuzhambu

Ingredients
  

  • 4 - Eggs boiled and halved
  • 1 tsp Fennel seeds Perinjeerakam
  • 1 tsp Cumin seeds Jeerakam
  • 1/2 cup Grated coconut
  • 2 tsp Poppy seeds Khashakhasha
  • 3 nos Tomato chopped, medium
  • 2 nos Onion chopped, medium
  • 1 no Bay leaf Vazhana/Karuga ela
  • 1" piece Cinnamon Karugapatta
  • 2 nos Cardamom Elakka
  • 2 nos Cloves Grambu
  • Curry leaves A few
  • 2 - Oil
  • 3 tsp Sambar powder
  • 1/2 tsp Garam masala powder
  • Coriander leaves for garnishing
  • Salt As reqd

Instructions
 

  • Boil the eggs and cut into two pieces.
  • Soak poppy seeds, fennel seeds and cumin seeds in hot water for 30 mins - 1 hr.
  • Grind the above mixture with coconut to make it a paste.
  • Heat a little oil in a pan.
  • Add bay leaf, cinnamon, cardamom and cloves.
  • Add onions and when it turns brown, add the chopped tomatoes and fry well.
  • Add the paste.
  • Add the powders and saute well.
  • Add sufficient water and salt.
  • When the oil separates, add the boiled eggs and chopped coriander leaves.
  • Switch off the stove.
