Kerala Style Ghee Rice

Kerala Style Ghee Rice is an aromatic savory rice dish made with rice, ghee and spices. This recipe is a Malabar special and from the Kerala cuisine. This is a very simple recipe and takes your simple meal to a different level. Rather than having plain steamed rice, some more work and you get a fragrant and delicious rice that goes with any dal recipe. This pairs well with any spicy mutton or chicken curry or any vegetable curry. This ghee rice preparation is very simple and easy to make and every common preparation for special occasions like family gatherings or parties. Ingredients
  

  • 1 cup Basmati rice
  • 1 no Onion medium
  • 2 tbsp Ghee
  • 1/2" piece Cinnamon Karugapatta
  • 1 no Cloves Grambu
  • 1 no Cardamom Elakka
  • Fennel seeds A pinch, Perinjeerakam
  • 2 cups Water
  • Salt As reqd

Instructions
 

  • Soak rice in water for 30 mins.
  • Heat ghee in a heavy bottomed vessel.
  • Add fennel seeds.
  • After a few seconds, add onion and stir, till, it turns transparent.
  • Add cinnamon, cloves and cardamom and stir.
  • Add 2 cups of water.
  • :- For 1 cup of rice, add 2 cups of water.
  • Add enough salt and mix well.
  • Allow it to boil.
  • Add washed rice and let it boil.
  • Cover and cook on a low flame.
  • When there is no water, remove and keep the lid closed, until rice is cooked well.
  • :- Serve with parippu (dal) curry , chicken or mutton curry, pickle and curd.
