Easy Chicken Olathiyathu

Ingredients
  

  • 1 kg Chicken
  • 1" piece Ginger ground
  • 1 no Garlic pod ground
  • 1 tsp Turmeric powder
  • 3 tsp Chilly powder
  • 3 tsp Coriander powder
  • 1 heaped Garam masala powder
  • Salt As reqd
  • 2 nos Onion cut into medium pieces, large
  • 2 nos Tomatoes cut into quarters, medium
  • 3 - Coconut oil
  • Curry leaves A few
  • Coriander leaves for garnishing

Instructions
 

  • Wash chicken well and cut into medium pieces.
  • Mix together onion, masala powders, ginger paste and garlic paste.
  • Rub the above paste onto the chicken pieces and marinate it atleast for 1 hour. 4)Heat up a pan.
  • Add a cup of water along with salt and tomatoes. Mix well.
  • Allow it to boil on a medium flame.
  • Stir occasionally, cover & cook, till water is absorbed & chicken is done.
  • Heat oil in a non-stick pan.
  • Add curry leaves and saute.
  • Add chicken pieces and gently toss around.
  • Cook, till the pieces turn brown and all the water is dried up.
  • Garnish with curry leaves and coriander leaves.
  • :- Serve hot.
  • :- You can add more oil, if necessary. Salt can be added along with the masalas too.
