Chicken Delight

Chicken Delight is a delicious side dish prepared with known ingredients. It seems like having a long procedure, but worth to prepare. This chicken recipe has fenugreek which has a bitter taste. But that bitter taste gives an amazing flavor to this dish. The overnight marinated chicken is cooked with fenugreek and spice masala which goes well with roti, chappathi etc.

Ingredients
  

  • 1 kg Chicken whole/thighs
  • 1 cup Fenugreek leaves chopped finely, Uluva
  • 1 cup Onions
  • 1/2 cup Spring onions
  • 4 nos Green chillies slit lengthwise
  • 1/2 tsp Asafoetida Kayam
  • 1 tsp Garam masala powder
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • Salt As reqd
  • Red chilly powder As reqd
  • 1/2 cup Coriander leaves
  • 2 nos Bay leaf Vazhana Karuga ela
  • 2 sticks Cinnamon Karugapatta
  • 2 nos Cardamom Elakka
  • 3 - Veg oil
  • Ginger Garlic paste - 1 tsp
  • 1 tsp Tomato ketchup
  • 1/2 tbsp Cumin seeds Jeerakam
  • 1/2 tbsp Mustard seeds
  • Red food colour (optional)

For marination:

  • 2 tsp Curd
  • 1 tsp Ginger Garlic paste
  • 1 tsp Soya sauce
  • 1 tsp Vinegar
  • 1 - Corn flour
  • Salt As reqd
  • Chilly powder As reqd
  • 1/2 tsp Turmeric powder
  • 3 tsp Lemon juice

Instructions
 

  • Chop the chicken into medium size pieces.
  • Wash them thoroughly with water.
  • Mix together the ingredients for marination and marinate the chicken overnight.
  • Heat oil in a pan.
  • Add asafoetida, mustard seeds, cumin seeds, cinnamon sticks, bay leaves, cardamom pods.
  • Add finely chopped onions, spring onions and slit green chillies and fry them till they become golden.
  • Add fenugreek leaves, ginger-garlic paste, salt, chilly powder, coriander powder, garam masala powder, tumeric powder and tomato ketchup.
  • Add the marinated chicken pieces and cook for sometime.
  • Add the red food colour, if desired.
  • Once the chicken pieces are cooked, adjust salt and chilly powder.
  • Add finely chopped coriander leaves.
  • Serve with Naan, Kulcha or plain home made chappathis.
