Egg Molee

Spicy poached eggs

Ingredients
  

  • 4 nos Eggs
  • 2 nos Onion finely sliced
  • 1 no Tomato finely sliced
  • Ginger chopped
  • 3 nos Garlic pods chopped
  • 4 nos Green chillies slit
  • 1/4 tsp Tumeric powder
  • Salt As reqd
  • 3 tbsp Oil
  • 50 ml Thin coconut milk
  • 50 ml Thick coconut milk
  • Curry leaves A few

Instructions
 

  • Heat oil in a pan or a kadai.
  • Add onion, ginger, garlic, green chillies and curry leaves and fry, till they become soft.
  • Add turmeric powder and salt.
  • Add thin coconut milk and allow it to boil.
  • When it starts boiling, break the eggs into it one by one and cover it with a lid to set.
  • Once the eggs are cooked, add tomato and thick coconut milk.
  • Simmer for 2 - 3 mins.
