Brinjal Masala - Simple And Spicy, is an awesome, tasty dish packed with fried brinjal pieces in a thick spicy masala gravy. The dish tastes yummy with hot rice and chappathis. Ingredients
  

  • 4 nos Brinjal Vazhuthananga
  • Salt As reqd
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Chilly powder
  • 5 - Small onion Kunjulli
  • 1 no Onion finely chopped, medium
  • 1" piece Ginger
  • Green chillies As reqd
  • 1 tsp Cumin seeds Jeerakam
  • 2 nos Tomato finely chopped, small
  • 1 tsp Mustard seeds
  • Cooking oil for deep frying
  • 2 tbsp Coriander leaves chopped

Instructions
 

  • For preparing the delicious dish, first mix together chilly powder, salt and turmeric powder into a paste with little water..
  • Slice brinjal into small pieces. Apply spice mix on the inner faces and keep aside for 30 minutes.
  • Grind together small onions, ginger, green chillies and cumin seeds into a fine paste.
  • Heat oil in a pan or a kadai.
  • Deep fry brinjal and keep aside.
  • Remove the oil leaving 1 tbsp in the pan. Add Mustard seeds and let it splutter
  • Then Add onion and fry, till it turns brown.
  • Add ground paste and fry, till oil separates.
  • Add tomato, salt and little sugar.
  • Mash tomato well and add enough water as per required consistency.
  • Bring it to a boil.
  • Add brinjal and cook covered for about 5 mins on a low flame.
  • Remove brinjal and place them on a serving dish.
  • Pour the gravy over them.
  • Garnish with coriander leaves.
  • :- Serve Brinjal Masala hot.
