Tomato Rice - Lunch Box Special Easy

Basmati Rice cooked with tomatoes and coconut milk

Ingredients
  

  • 1 cup Basmati Rice soaked in water for 1/2 hr
  • 1 cup Coconut milk
  • 1 cup Tomatoes juice
  • 3 nos Garlic pods
  • 1/4 tsp Poppy seeds Khashakhasha
  • 1/4 cup Onions cut length wise
  • 3 nos Green chillies cut length wise
  • Cinnamon(Karugapatta)
  • Cloves(Grambu)
  • Coriander leaves for garnishing

Instructions
 

  • Grind garlic and poppy seeds into a paste.
  • Heat ghee in a pan.
  • Saute cinnamon, cloves, onions, chillies and the garlic-poppy seeds paste.
  • Add coconut milk and tomato juice and bring it to a boil.
  • Add rice and salt.
  • Cover the pan and keep on a low flame.
  • When it is done, add coriander leaves.
