Tomato Rice - Lunch Box Special Easy Basmati Rice cooked with tomatoes and coconut milk 1 cup Basmati Rice (soaked in water for 1/2 hr)1 cup Coconut milk1 cup Tomatoes (juice)3 nos Garlic pods1/4 tsp Poppy seeds (Khashakhasha)1/4 cup Onions (cut length wise)3 nos Green chillies (cut length wise)Cinnamon(Karugapatta) Cloves(Grambu) Coriander leaves for garnishing Grind garlic and poppy seeds into a paste.Heat ghee in a pan.Saute cinnamon, cloves, onions, chillies and the garlic-poppy seeds paste.Add coconut milk and tomato juice and bring it to a boil.Add rice and salt.Cover the pan and keep on a low flame.When it is done, add coriander leaves.
