For preparing Gajar Ka Halwa, first put carrots and ground cardamom powder in a heavy bottomed large pan and cook over very low heat, for about 20-30 minutes or until the carrots are tender and all the water has absorbed.
There is no need to add water as the carrots will release their own water. Add 14 cup of water, if the carrots stick to the bottom of the pan. Keep cooked carrots aside.
Heat ghee in another pan.
Add whole cardamoms and fry for a couple of minutes.
Stir in cooked carrots and stir fry for few minutes.
Add sugar and stirring continuously, cook uncovered for 10 minutes, until all the water from the sugar has evaporated.
Sprinkle nido powder milk and mix it really well.
Add kewra (if using) and stirring frequently, cook for 3-4 minutes.
When the ghee begin to separate and has glossy shine, remove from flame.
Garnish Gajar Ka Halwa with sliced almonds.
