Lentils(Moong Dal) with Vegetables - Oriyan style

Ingredients
  

  • 100 gm Lentils Moong dal
  • 1 no Potato cut into 8 pieces, medium
  • 1 no Brinjal medium size & cut into pieces, Vazhuthananga
  • 50 gm Squash cut into pieces
  • 4 nos Taro root peeled and cut into half
  • 1 tsp Turmeric powder
  • Salt As reqd
  • 1 tsp Cumin seeds Jeerakam
  • 1" piece Ginger chopped
  • 2-3 nos Dry red chillies Kollamulaku
  • 1 - Ghee

For seasoning:

  • Cumin seeds A pinch, jeerakam
  • Red chilly powder A pinch

Instructions
 

  • Boil the dal with salt and turmeric powder in a vessel for 10 minutes.
  • Add potato, taro root and squash to it and allow it to boil for 10 minutes. Keep the vessel covered.
  • Add brinjal and boil it for 5 more minutes, till everything is cooked.
  • Heat ghee in a pan.
  • Add cumin seeds, chopped ginger and red chillies.
  • When the cumin seeds splutter, add dal.
  • Add the cooked vegetables into it and mix well.
  • Add cumin seeds and red chilly powder fried in ghee.
  • :- It smells not only terrific but is tasty, easy to prepare and healthy to eat.
