Bitter Gourd Pickle Easy

Ingredients
  

  • 3 nos Bitter gourd Pavakka
  • 7 - Small onions Kunjulli
  • 1 tbsp Chilly powder
  • Asafoetida A pinch, Kayam
  • 7-8 nos Garlic pods
  • 2" piece Ginger cut finely
  • 7-8 Green chillies cut lengthwise
  • 1 tsp Mustard seeds
  • 1 or Vinegar
  • 5 tbsp Oil
  • Salt As reqd
  • ; You can increase the no. of green chillies depending on how hot you want it to be.

Instructions
 

  • Cut bittergourd into small pieces and leave it in salt water for an hour or so.
  • Drain the water and squeeze out the excess water from the bitter gourd and keep it aside.
  • Heat oil in a pan.
  • Fry onions, green chilly, ginger and garlic.
  • When onion becomes brown, add chilly powder and asafoetida.
  • Add the bittergourd pieces and vinegar and mix well.
  • Add salt as required.
  • Cook till bittergourd is cooked.
  • Splutter mustard seeds in another pan and add this to the above bitter gourd mixture.
  • Remove from flame.
