Ingredients
- Bitter gourd(Pavakka) - 3 nos
- Small onions(Kunjulli) - 7 -
- Chilly powder - 1 tbsp
- Asafoetida(A pinch, Kayam) -
- Garlic pods - 7-8 nos
- Ginger(cut finely) - 2" piece
- Green chillies(cut lengthwise) - 7-8
- Mustard seeds - 1 tsp
- Vinegar - 1 or
- Oil - 5 tbsp
- Salt(As reqd) -
- ;(You can increase the no. of green chillies depending on how hot you want it to be.) -

Instructions
- Drain the water and squeeze out the excess water from the bitter gourd and keep it aside.
- Heat oil in a pan.
- When onion becomes brown, add chilly powder and asafoetida.
- Add the bittergourd pieces and vinegar and mix well.
- Add salt as required.
- Cook till bittergourd is cooked.
- Splutter mustard seeds in another pan and add this to the above bitter gourd mixture.
- Remove from flame.
