Green Potatoes

A colourful combination of potatoes and spinach(paalak)

Ingredients
  

  • 1/2 kg Potatoes
  • 1/2 kg Spinach Paalak
  • 1 tbsp Ginger grated
  • 1 tsp Black pepper whole
  • 3 tbsp Oil
  • 4 nos Green chillies
  • Salt As reqd
  • 1 tbsp Ghee

Instructions
 

  • Boil the potatoes and peel off the skin.
  • Par boil the spinach, mash them and keep it aside.
  • Heat oil in a pan.
  • Fry the potatoes and keep aside.
  • To the remaining oil, add grated ginger, whole black pepper and slit green chillies.
  • Add the mashed spinach and cook for a while.
  • Add the potatoes along with salt and cook again.
  • When done, pour the ghee and remove.
  • :- Serve hot with chappathis.
