Green Potatoes A colourful combination of potatoes and spinach(paalak) 1/2 kg Potatoes1/2 kg Spinach (Paalak)1 tbsp Ginger (grated)1 tsp Black pepper (whole)3 tbsp Oil4 nos Green chilliesSalt (As reqd)1 tbsp Ghee Boil the potatoes and peel off the skin.Par boil the spinach, mash them and keep it aside.Heat oil in a pan.Fry the potatoes and keep aside. To the remaining oil, add grated ginger, whole black pepper and slit green chillies.Add the mashed spinach and cook for a while.Add the potatoes along with salt and cook again.When done, pour the ghee and remove.:- Serve hot with chappathis.
