Grate bitter gourd into very small pieces.
Cut onion, chillies and ginger into very small pieces using a grater.
Mix together bitter gourd, grated coconut, ginger, turmeric, onion and green chillies.
Heat oil in a pan or a kadai.
Add mustard seeds and allow them to crackle.
Add the bitter gourd mixture into the frying pan.
Add salt and stir well.
Keep the pan covered and cook on a low flame for 7 minutes. Stir well.
:- Serve hot with plain rice.
