Eggplant Bhaji

Eggplant(Brinjal) curry

Ingredients
  

  • 1 Eggplant Brinjal/Vazhuthananga
  • 4 tbsp Grated coconut
  • 1/2 Onion chopped
  • Sugar A pinch
  • Salt As reqd
  • For seasoning:
  • 2 tbsp Oil
  • 1 tsp Black gram Uzhunnuparippu
  • 1/2 tsp Mustard seeds
  • 2 nos Red chillies or green chillies
  • 1/2 tsp Asafoetida Kayam

Instructions
 

  • Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
  • Heat oil in a pan.
  • Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
  • Sprinkle salt and sugar.
  • Add grated coconut and chopped onion.
  • Mix well.
