Eggplant Bhaji Eggplant(Brinjal) curry 1 Eggplant (Brinjal/Vazhuthananga)4 tbsp Grated coconut1/2 Onion (chopped)Sugar (A pinch)Salt (As reqd)For seasoning: 2 tbsp Oil1 tsp Black gram (Uzhunnuparippu)1/2 tsp Mustard seeds2 nos Red chillies or green chillies1/2 tsp Asafoetida (Kayam) Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
