Yoghurt/Curd

For seasoning:

Oil
Asafoetida
A pinch, Kayam

Mustard seeds

Instructions
Cut eggplant into small pieces.
Grind coconut by adding desired amount of water and set aside.
Heat oil in a pan.
Add all the ingredients for seasoning one by one.
Add the eggplant pieces and stir fry in low heat. Don`t cover with the lid.
Fry until cooked.
Allow it to cool.
Mix yoghurt and ground coconut.
Add salt and chopped onions.
:- Serve with plain rice or with any pulao.
