Eggplant Raita

Raita made with eggplant(brinjal)

Ingredients
  

  • 1 no Eggplant(medium) Vazhuthananga
  • 1/2 cup Onions(optional) chopped
  • 1/2 cup Grated coconut optional
  • 1 cup Yoghurt/Curd
  • Salt As reqd
  • For seasoning:
  • 2 tsp Oil
  • Asafoetida A pinch, Kayam
  • 1 tsp Mustard seeds
  • 1 tsp Black gram Uzhunnuparippu
  • 2 nos Red /green chillies

Instructions
 

  • Cut eggplant into small pieces.
  • Grind coconut by adding desired amount of water and set aside.
  • Heat oil in a pan.
  • Add all the ingredients for seasoning one by one.
  • Add the eggplant pieces and stir fry in low heat. Don`t cover with the lid.
  • Fry until cooked.
  • Allow it to cool.
  • Mix yoghurt and ground coconut.
  • Add salt and chopped onions.
  • :- Serve with plain rice or with any pulao.
