Aloo Kura

Ingredients
  

  • 250 gm Potato
  • 2 nos Onions big
  • 1 1/2 inch Ginger
  • 5 nos Green chillies
  • Oil for cooking
  • Salt As reqd

Tempering:-

  • 1 tsp Bengal Gram Kadalaparippu
  • 1 tsp Black gram Uzhunnuparippu
  • 1/2 tsp Mustard seeds
  • Asafoetida A pinch, Kayam
  • 1 tsp Oil

Instructions
 

  • Wash potatoes and cut them into cubes.
  • Boil them for about 7 - 8 mins and allow it to cool.
  • Next, peel them off and keep them aside.
  • Chop onions, ginger and green chillies finely and keep them aside too.
  • Heat oil in a vessel and put all the ingredients for tempering and fry them for 3-4 mins.
  • Add chopped onions, ginger, green chillies and fry for 3-4 mins.
  • Then, add peeled potatoes along with salt and mix well.
  • Put chopped curry leaves and coriander leaves.
