Kerala Special Chicken Roast

Ingredients
  

  • 1 kg Chicken
  • 300 g Onions
  • 3/4" piece Ginger Chopped
  • 3 nos. Green chillies Slit
  • 1/2 cup Coconut milk
  • 2 stems Curry leaves
  • 10 nos Cashews
  • 2 1/2 tsp Chilly powder
  • 1 1/2 tbsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Garam masala powder
  • 1/2 cup Oil
  • Salt As reqd
  • Coriander leaves for garnishing

Instructions
 

  • Cut chicken into medium sized pieces.
  • Marinate chicken pieces with 1 tsp of chilly powder, a pinch of turmeric powder and salt for 30 mins.
  • Heat oil in a pan.
  • Fry the marinated chicken, till it turns golden brown.
  • Remove the chicken from the oil.
  • Grind the cashews to a paste in coconut milk. Keep the coconut mixture aside.
  • Heat up the remaining oil in the same pan.
  • Add onion, ginger, green chillies, curry leaves and fry, till golden brown.
  • Add the remaining chilly powder, turmeric powder, coriander powder, garam masala powder and heat for a while.
  • Put the fried chicken pieces into the pan along with coconut milk mixture and mix well.
  • Add salt to taste.
  • Cook for few minutes, until the coconut milk is fully absorbed.
  • Garnish with coriander leaves.
  • :- Serve hot.
