Green chillies (Slit); 1/2 cup Coconut milk; 2 stems Curry leaves; 10 nos Cashews; 2 1/2 tsp Chilly powder; 1 1/2 tbsp Coriander powder; 1/4 tsp Turmeric powder; 1/2 tsp Garam masala powder; 1/2 cup Oil; Salt (As reqd); Coriander leaves for garnishing

Ingredients

1 kg Chicken
300 g Onions
3/4" piece Ginger Chopped
3 nos. Green chillies Slit
1/2 cup Coconut milk
2 stems Curry leaves
10 nos Cashews
2 1/2 tsp Chilly powder
1 1/2 tbsp Coriander powder
1/4 tsp Turmeric powder
1/2 tsp Garam masala powder
1/2 cup Oil
Salt As reqd
Coriander leaves for garnishing

Instructions

Cut chicken into medium sized pieces.
Marinate chicken pieces with 1 tsp of chilly powder, a pinch of turmeric powder and salt for 30 mins.
Heat oil in a pan.
Fry the marinated chicken, till it turns golden brown.
Remove the chicken from the oil.
Grind the cashews to a paste in coconut milk. Keep the coconut mixture aside.
Heat up the remaining oil in the same pan.
Add onion, ginger, green chillies, curry leaves and fry, till golden brown.
Add the remaining chilly powder, turmeric powder, coriander powder, garam masala powder and heat for a while.
Put the fried chicken pieces into the pan along with coconut milk mixture and mix well.
Add salt to taste.
Cook for few minutes, until the coconut milk is fully absorbed.
Garnish with coriander leaves.

This recipe was awesome. The day that i prepared this dish we had guests at home and they loved it including my hubby. The only change i made to this dish is that along with the mentioned ingredients i marinated the chicken pieces with some coriander powder, ginger garlic paste and garam masala powder before frying it.
