Kerala Special Kozhi Roast

  • Cut chicken into medium pieces.
  • Marinate chicken pieces with 1 tsp of chilly powder, a pinch of turmeric powder and salt for 30 mins.
  • Heat oil in a pan.
  • Fry the marinated chicken, till it turns golden brown.
  • Remove the chicken from the oil.
  • Heat up the remaining oil in the same pan.
  • Add onion, ginger, green chillies and curry leaves and fry, till golden brown.
  • Add the remaining chilly powder , turmeric powder, coriander powder, masala powder and heat for a while.
  • Put the fried chicken pieces into the pan along with coconut milk and mix well.
  • Add salt to taste.
  • Cook for few minutes, until the coconut milk is absorbed.
  • Garnish with coriander leaves.
  • :- Serve hot.
