Take a blender and add sugar, eggs and vanilla essence. Blend it for 1 minute.
Take a bowl and add maida, baking powder and a pinch of salt. Sift and mix it very well. Pour egg mixture and sunflower oil.
Mix it well with a spoon.
Brush some oil on Appe Pan, pour 1.5 tsp batter in each. Cover and cook in low heat for 5-7 minutes.
Flip and cook for few seconds and remove it.
Soft and spongy vanilla cake is ready.
