Heat 2 tsp oil in a pan and roast okra pieces for 3 minutes. Keep it aside.
In the same pan heat 1 tbsp oil and splutter mustard seeds and urad dhal. Then add sliced onion and saute for few minutes until the onion turns golden brown in colour.
Add crushed garlic and saute for 1 minute. Keep the flame in medium.
Add potato pieces and saute for 1 minute.
Add red chilly powder, turmeric powder and coriander powder.
Saute for 1 minute to get off the raw smell of masala powders.
Add water and mix well, keep the flame low. Cover and cook for 3-4 minutes.
Finally add sautéed okra and salt as required.
Combine well, cover and cook for 1 minutes.
