  • Heat 2 tsp oil in a pan and roast okra pieces for 3 minutes. Keep it aside.
  • In the same pan heat 1 tbsp oil and splutter mustard seeds and urad dhal. Then add sliced onion and saute for few minutes until the onion turns golden brown in colour.
  • Add crushed garlic and saute for 1 minute. Keep the flame in medium.
  • Add potato pieces and saute for 1 minute.
  • Add red chilly powder, turmeric powder and coriander powder.
  • Saute for 1 minute to get off the raw smell of masala powders.
  • Add water and mix well, keep the flame low. Cover and cook for 3-4 minutes.
  • Finally add sautéed okra and salt as required.
  • Combine well, cover and cook for 1 minutes.
  • Super tasty Aloo Bhindhi Fry is Ready now. Serve it along with rice, chappathi etc.
