Ingredients
  

  • 1 cup Maida/All purpose flour
  • 1 no. Egg
  • 1/4 tsp Turmeric powder
  • As reqd Salt
  • As reqd Water
  • For Stuffing:
  • 1 Cup(grated) Coconut
  • 3 tbsp Sugar
  • 1/2 tsp Cardamom powder
  • 10 each Cashew nuts and raisins
  • 3 tbsp Water

Instructions
 

  • Heat a pan and add sugar and water to make a syrup. Add coconut, cardamom powder, cashew nuts, raisins and mix well. Stir continuously in medium heat for 5 minutes and remove from the flame. Now the filling is ready.
  • Take a bowl and add maida, egg, turmeric powder, salt and mix well.
  • Add enough water and make a smooth batter. The batter should be thinner than the dosa batter.
  • Heat a non-stick pan and pour a spoon full of batter in the centre. Spread with the back of the spoon to a thin round. Keep on medium flame for 1-2 minutes.
  • When it is cooked on one side, remove into a plate and place a spoon full of coconut filling on one end of the pancake and roll it.
  • Tasty Elanchi is ready.
