Wheat Rice Briyani

I find myself substituting rice with whole wheat, surrendering to the pre occupied notion that wheat is healthier than starchy polished rice

Ingredients
  

  • Wheat rice 200g
  • onion 2 no.
  • tomato 2 no.
  • carrot 1no.
  • green chili 2no.
  • mint leaves 1/4 cup
  • red chili 2 no.
  • ginger garlic paste 2 tsp
  • salt to taste
  • sambar masala powder 1 tsp
  • turmeric powder 1 tsp
  • oil 4 tsp
  • ghee 2 tsp
  • mustard 1 tsp
  • broken urad dal 1/2 tsp
  • bengal gram 1/2 tsp

Instructions
 

  • wash and soak the wheat rice in water for 1/2 hour
  • chop the onion. red chili , green chili and carrot
  • in a cooker heat the oil and ghee and temper the mustard, broken urad dal and bengal gram
  • add onion, red chili and green chili, mint leaves and saute it until the onion turn into brown
  • add chopped tomato and mix well
  • add ginger garlic paste and mix well
  • add turmeric powder, sambar masala and salt and mix well
  • add carrot and mix it and allow to cook for 5 mins
  • now add water for 200 gm wheat rice add 500 gram water and allow to boil ( 1:2.5 ratio)
  • once the water boiled add soaked wheat rice and mix well, after two mins keep in pressure and allow for 1 whistle
  • now wheat rice briyani is ready, garnish with coriander leaves and cashews. serve with chutney
