Dindigul Mutton Biriyani

Dindigul Mutton Biriyani is a specialty dish in the region of Dindigul in Tamil Nadu. This biriyani tastes very superior to other biriyani dishes for its unique taste and flavor. What makes the dish unique is the Seeraga Samba Rice the pride of the state. The rice is full of flavor and aroma compared to other biriyani rice. Ingredients
  

  • 1/2 kg Mutton
  • 2 cups Seeraga Samba Rice
  • 1/4 tsp Turmeric
  • Salt as per taste
  • 1 Onion
  • 1 Tomato
  • 6 flakes garlic
  • 2 inch Ginger
  • 5 Green chili
  • 1 handful Mint and coriander leaves
  • 5-6 nos Shallots
  • 2 nos Bay leaves
  • 2 small Cinnamon
  • 5 nos Cloves
  • 1 tsp Chili powder
  • 2 tsp Garam masala
  • 2 tblsp Curd
  • 4 cups Water
  • 1/4 cup Oil
  • 2 tblsp Ghee

Instructions
 

  • In a pressure pan add washed mutton and turmeric, 1/2 tsp salt and 1/2 cup water, 1 tsp oil and cook upto 3 whistles until cooked.
  • In a mixer add shallots, ginger, garlic, green chilies and grind coarsely.
  • Now add few mint leaves and make a fine paste.
  • In a pan add oil and ghee.
  • Now add whole spices and temper.
  • Next add onion and fry till golden brown in color.
  • Now add remaining mint and coriander leaves and saute.
  • Now add ground paste and cook till raw smell goes.
  • Next add tomato and saute till soft.
  • Now add all powders and salt as required.
  • Add cooked mutton and mix well.
  • Now add curd, cook well and add remaining water.
  • When water boils, add rice and close pan and cook for 10 mins in low flame. The delicious biriyani is done.
