Carrot Rice - Healthy

A quick flavourful rice recipe best suited for kids, healthy too

Ingredients
  

  • 3 to Carrot
  • 2 cups Raw Rice
  • 10 leaves Curry Leaves
  • 1 small Ginger
  • 2 pieces Garlics
  • 5 Nos Coriander leaves
  • 1 No Onion
  • 3 tspns Peanuts
  • 1 tspn Cumin Seeds
  • 1 tspn Garam Masala Powder
  • 1 tspn Red Chilli Powder
  • Salt To taste
  • 4 Coconut/Refined Oil

Instructions
 

  • Cook the raw rice, remove water from it and keep it aside to cool
  • Clean the Carrots and cut/grate them into thin and small pieces
  • Cut the Onion and Coriander leaves into small pieces and make a paste of Ginger and Garlic and keep them aside.
  • Heat some oil in a frying pan and then add the Cumin seeds into the hot oil
  • Add Peanuts also
  • Also add chopped Onion, Curry leaves and Ginger-Garlic paste and stir the mix for about two minutes
  • Add the grated Carrot along with Garam Masala powder, Red Chilli powder and required quantity of Salt and stir the mix well
  • When the colour of the mix turns into light brown, add the cooked rice into it
  • Stir the mix for about five minutes and change the rice to a serving vessel
  • Carrot rice is ready. This rice can serve with Coconut/Onion/Coriander leaves chutney or pickles
