- Cook the raw rice, remove water from it and keep it aside to cool 
- Clean the Carrots and cut/grate them into thin and small pieces 
- Cut the Onion and Coriander leaves into small pieces and make  a paste of Ginger and Garlic and keep them aside. 
- Heat some oil in a frying pan and then add the Cumin seeds into the hot oil 
- Add Peanuts also 
- Also add chopped Onion, Curry leaves and Ginger-Garlic paste and stir the mix for about  two minutes 
- Add the grated Carrot along with Garam Masala powder, Red Chilli powder and required quantity of Salt and stir the mix well 
- When the colour of the mix turns into light brown, add the cooked rice into it 
- Stir the mix for about five minutes and change the rice to a serving vessel 
- Carrot rice is ready.  This rice can serve with Coconut/Onion/Coriander leaves chutney or pickles
