Stuffed Brinjal
This is a tasty dish with brinjal.it is very good for health.It is good curry for chappathi,rice and rotti.

- 4 nos Brinjals slit them on four sides without breaking
- 1/2 cup Peanut powder
- 2 nos Onions
- 2 nos Tomatoes
- 1 tsp Chilli powder
- 1 tsp peanut powder
- 1/4 tsp Turmeric powder
- 1 bunch Coriander leaves chopped
- 1 cup Water
- 1 tbsp Oil
In a vessel first put peanut powder,chilli powder,turmeric powder and gram masala
Add 1 spoon of water and mix well
Stuff this mix into brinjals.
In a kadai put 1 spoon oil and add onions,tomatoes and saute for 2 minutes add the remaining masala to this
Add stuffed brinjals to this , add salt and saute for a minute.
Add 1 cup water and close kadai with lid.cook for 10 minutes.
Now brinjal becomes soft toss the other side and cook for 2 more minutes until brinjal becomes tender and cooked.Add coriander to this.
Now stuffed brinjal is ready to serve.
