Stuffed Brinjal

This is a tasty dish with brinjal.it is very good for health.It is good curry for chappathi,rice and rotti.

Ingredients
  

  • 4 nos Brinjals slit them on four sides without breaking
  • 1/2 cup Peanut powder
  • 2 nos Onions
  • 2 nos Tomatoes
  • 1 tsp Chilli powder
  • 1 tsp peanut powder
  • 1/4 tsp Turmeric powder
  • 1 bunch Coriander leaves chopped
  • 1 cup Water
  • 1 tbsp Oil

Instructions
 

  • In a vessel first put peanut powder,chilli powder,turmeric powder and gram masala
  • Add 1 spoon of water and mix well
  • Stuff this mix into brinjals.
  • In a kadai put 1 spoon oil and add onions,tomatoes and saute for 2 minutes add the remaining masala to this
  • Add stuffed brinjals to this , add salt and saute for a minute.
  • Add 1 cup water and close kadai with lid.cook for 10 minutes.
  • Now brinjal becomes soft toss the other side and cook for 2 more minutes until brinjal becomes tender and cooked.Add coriander to this.
  • Now stuffed brinjal is ready to serve.
