Chicken Rezala

Chicken Rezala is an authentic Bengali recipe. It is a chicken curry in a white gravy. This dish was invented by Royal Chef's of Bengal.

Ingredients
  

  • Chicken: 2 pounds
  • Cashew nuts paste: 2 tbsp
  • Poppy seeds paste: 2 tbsp
  • Ghee: 3 tbsp
  • Onion paste: 1 cup
  • Garlic grated: 1 tbsp
  • Ginger grated: 1 tbsp
  • 3 Red chilli: 2
  • Veg oil: 2 tbsp
  • Bay leaf: 1
  • Cardamom: 4
  • Cinnamon: 1
  • Cloves: 3
  • Peppercorn: 1 ½ tsp
  • Nutmeg powder: pinch
  • Curd: 5 tbs
  • Sugar/ optional 1 tsp
  • 3 Green chilli chopped: 2
  • Cream: ¼ cup
  • Salt t

Instructions
 

  • In a bowl add pepper powder, garlic, ginger, veg oil, salt and mix together. Add the chicken and curd. Marinate well. Keep it aside for 2 hours.

  • Heat oil and ghee in a pan add bay leaf, red chilli, cloves, cardamom, cloves, and stir for few seconds.
  • Add onion paste and stir till the raw smell going out.
  • Add green chilli, nutmeg powder and stir continuously for one minute. Add the cashew nut paste and poppy seeds paste. Stir for few minutes.
  • Add marinated chicken. Mix well with the other ingredients. Add enough water for cook the chicken. Stir and cover with a lid and allow to cook the chicken in a low flame.

  • Add the cream and sugar. stir check for salt and sweetness and adjust your taste. Switch off the flame and remove the curry in a bowl and serve.
