Spinach & Brinjal Bhaji

Ingredients
  

  • Finely chopped Spinach : 1 bunch
  • Brinjal cubed : 2 small
  • Onions finely chopped : 2 nos
  • Tomato finely chopped : 2 nod
  • 3 cloves Minced garlic : 2
  • 3 nos Green chillies chopped : 2
  • Whole red chillies : 2 nos
  • Cinnamon : 1” pc
  • 4 nos Cloves : 3
  • Whole jeera : ½ tsp
  • Turmeric powder : ½ tsp
  • Red chilli powder : ½ tsp
  • Oil : 2 tsp
  • Salt : to taste

Instructions
 

  • Heat oil in a pan and add whole jeera. After it crackles add minced garlic and fry till it turns golden brown in color.

  • Add whole red chillies, cinnamon, cloves and onions and fry for 6 - 8 minutes.

  • Add chopped tomato, green chillies, red chilli powder, turmeric powder and salt.
  • Stir fry the masala for 3 - 4 minutes till the oil separates and the masala is cooked.
  • Add chopped spinach and cubed brinjal and mix well.
  • Cover the pan and cook on a lower flame for 15 - 20 minutes stirring occasionally till the vegetables are cooked.
  • Enter Step
  • Serve with roti / paratha.
