Pani Puri - North Indian Snack
Pani puri is round puffed balls filled with potato mixture and served with sweet and tangy pani. This is very famous street food in North India. It is also a common street snack in several regions of the Indian Subcontinent.

Puri : 1 pkt Potatoes : 2 nos Green gram : 1 cup ( soaked overnight in water ) Sweet tamarind : 1 cup For the pani : Coriander leaves : ½ bunch Mint leaves : ½ bunch Green chillies : 50 gm Ginger : 1” pc 5 nos Cloves : 4 Lemon juice : 2 nos Black salt : 1 tsp Salt : to taste
Wash the coriander, mint leaves and green chillies and grate the ginger.
Squeeze juice of 2 lemons.
Grind all the above ingredients to a fine paste.
Boil and mash the potatoes and add salt and red chilli powder. Boil the whole green gram separately and mix with the boiled potatoes.
To the ground masala paste add some ice cubes and 1 liter of cold water and mix well. Adjust the quantity of water and salt as required.
Crack a small hole in the centre of each puri.
Fill each puri with a little potato and sprout mixture, then top a little khajur chutney, immerse it in the chilled pani and eat immediately.
