Tasty Potato in coconut gravy

Ingredients
  

  • 6 nos Medium sized potatoes boiled and cubed : 5
  • Medium sized onions finely chopped : 3 nos
  • 9 Red chillies : 8
  • ½ grated coconut
  • Ball tamarind : 1”inch
  • Oil : 2 tsp
  • Haldi / Turmeric powder : ½ tsp
  • Salt : to taste

Instructions
 

  • Boil and peel potatoes. Cut them into small cubes.
  • Grind the grated coconut, dry red chillies, and tamarind pulp to a smooth paste adding a little water.
  • In a non stick pan heat oil and fry the finely chopped onions till translucent.
  • Add the ground coconut masala paste, haldi powder, salt and 1cup of water. Let this simmer covered till the oil separates from the masala.
  • Add the potato cubes and a little more water and mix well.
  • Cover and keep on a low heat for few minutes till a thick gravy consistency is formed.
  • Serve hot with roti.
