Ingredients
  

  • Baingan / eggplant cut
  • in to ½ cubes : 1 medium
  • Potatoes peeled and cut
  • 2 nos in to ½ cubes : 1
  • Chopped Tomato :1 no
  • Whole jeera / cumin seeds : 1 tsp
  • Onion seeds / kalonji : 1 tsp
  • Coriander powder /
  • Dhania powder : 1 tsp
  • Jeera powder : ½ tsp
  • Turmeric / haldi powder : ½ tsp
  • Red chili powder : ½ tsp
  • Garam masala powder : ¼ tsp
  • Oil : 3 tsp
  • Salt : as reqd

Instructions
 

  • Heat the oil in a kadai and add whole jeera and onion seeds/ kalonji.
  • Add the cubed brinjal /eggplant and potato and mix well.
  • Add chopped tomato, coriander powder, jeera powder, red chili powder, turmeric powder,garam masala powder and salt.
  • Add ¼ cup water and cook covered on a low flame for 15-20 minutes till the vegetables are cooked.
  • Serve with roti.
