Baingan / eggplant cut
in to ½ cubes : 1 medium
Potatoes peeled and cut

in to ½ cubes : 1
Chopped Tomato :1 no
Whole jeera / cumin seeds : 1 tsp
Onion seeds / kalonji : 1 tsp
Coriander powder /
Dhania powder : 1 tsp
Jeera powder : ½ tsp
Turmeric / haldi powder : ½ tsp
Red chili powder : ½ tsp
Garam masala powder : ¼ tsp
Oil : 3 tsp
Salt : as reqd
Instructions
Heat the oil in a kadai and add whole jeera and onion seeds/ kalonji.
Add the cubed brinjal /eggplant and potato and mix well.
Add chopped tomato, coriander powder, jeera powder, red chili powder, turmeric powder,garam masala powder and salt.
Add ¼ cup water and cook covered on a low flame for 15-20 minutes till the vegetables are cooked.
Serve with roti.
