Ingredients
- Baingan / eggplant cut -
- in to ½ cubes : 1 medium -
- Potatoes peeled and cut -
- in to ½ cubes : 1 - 2 nos
- Chopped Tomato :1 no -
- Whole jeera / cumin seeds : 1 tsp -
- Onion seeds / kalonji : 1 tsp -
- Coriander powder -
- Dhania powder : 1 tsp -
- Jeera powder : ½ tsp -
- Turmeric / haldi powder : ½ tsp -
- Red chili powder : ½ tsp -
- Garam masala powder : ¼ tsp -
- Oil : 3 tsp -
- Salt : as reqd -

Instructions
- Add chopped tomato, coriander powder, jeera powder, red chili powder, turmeric powder,garam masala powder and salt.
- Add ¼ cup water and cook covered on a low flame for 15-20 minutes till the vegetables are cooked.
- Serve with roti.
