Beetroot Kadala Thoran | Beetroot and Black Chickpeas Stir Fry

Beetroot Kadala Thoran is a healthy, protein-rich, and colorful vegetarian side dish for everyday meals or Onam Sadya.

Ingredients
  

  • 1 & 1/2 Cup Beetroot Grated
  • 1/4 Cup Cooked Black Chickpea Smashed with a fork
  • 1/4 Cup Grated coconut
  • 1 No. Onion Sliced
  • 1 No. Green chilly Chopped
  • 1/4 Tsp Turmeric powder
  • 1/2 Tsp Red chilly powder
  • 1/2 Tsp Mustard Seeds
  • Curry leaves Few
  • 2 Tbsp Coconut Oil
  • Salt as reqd

Instructions
 

  • Heat oil in a pan, splutter mustard seeds and add some curry leaves.
  • Add sliced onion and green chilly.
  • Add grated beetroot.
  • Add salt, turmeric powder and red chilly powder.
  • Add grated coconut.
  • Add cooked and mashed black chickpea.
  • Combine well for 2-3 minutes. cover and cook for 5 minutes on low to medium flame. stir occasionally.
  • Serve along with steamed rice.
