- Mix the mashed potatoes, cheese, salt and pepper. 
- Imp:- The potatoes must be mashed thoroughly, otherwise the cutlet might break. Also, the potatoes must be drained well before mashing. 
- Add onion, cabbage and carrot along with green chillies and coriander leaves. Mix it very well. 
- Mould it into cylindrical shapes*, dip in eggwhite, coat in bread crumbs and deep fry. 
- While deep frying, make sure that the cutlets are fully immersed in oil. 
- *Shaped like diwan pillows. This shape allows cooking in lesser amount of oil and chances for breaking are less.
