1 Cup Raw rice 5 Cups Water 2 Pinch Salt 1 & ½ ltr Milk ½ Tsp cardamom powder 500 g Jaggery ½ Cup Cashew nut and raisins 1 Tbsp Ghee
Wash and drain the rice.
Add drained rice into a pressure cooker and add required water and cook it for 3 whistles.
Meanwhile melt jaggery in ½ cup water and strain it.
Once the rice is cooked and pressure is released, open the pressure cooker.
Pour the jaggery water into the cooked rice and bring it to boil until all the water is absorbed.
Now pour the milk.
Combine well and add cardamom powder.powder. Bring it to boil for 5 minutes.
Finally fry some cashew and raisins in ghee and pour it over the payasam and mix.
Tasty and delicious Kerala Ari Payasam is ready to serve.
