Kerala Traditional Egg Omelette | Nadan Mutta Omelette

Ingredients
  

  • 2 Nos. Eggs
  • 5 Nos. Shallots Chopped
  • 2 Nos. Green chillies Chopped
  • Few Curry leaves
  • 1 Tbsp Grated coconut
  • 1/2 Tsp Chilly flakes
  • 2 Tbsp Milk You can use either coconut milk or cow milk.
  • 1 Tbsp Coconut oil
  • Salt As reqd

Instructions
 

  • Rub chopped shallots, green chillies and curry leaves with your hand.
  • Add grated coconut and chilly flakes into it.
  • Add this mixture into a glass.
  • Break 2 eggs and add into the glass.
  • Pour milk.
  • Using a fork, whisk well till the eggs get nice and fluffy.
  • Heat oil in a pan and pour the mixture over it. Cook on low flame till the top is firm to touch.
  • Flip carefully and cook for another minute.
  • Take out and serve hot with cooked rice, chapathis or parotta..
